This excellent decaffeinated coffee comes from small farmers in the Cauca region of Colombia. Decaffeinated coffees have been much in the news lately, and techniques for decaffeination are making great strides. This coffee has been decaffeinated using what is probably one of the best process currently available, the E.A. process, or ethyl acetate. Ethyl acetate is a naturally occurring ester found in bananas, for example, and it binds caffeine very well. By dissolving coffee beans in a water bath containing ethyl acetate, the caffeine in coffee is removed very effectively without affecting the coffee's own flavour.
